Because wild rice is a specialty crop, the absence of rigid government grading allows us to customize characteristics at our Aitkin mill

You can specify:

  • Kernel Size & Color: Selection based on visual plate appeal.
  • Scarification Level: The mechanical process of removing microscopically thin strips of the bran layer to dictate cook time.
  • Custom Blending: Combining different kernel lengths or scarification levels to achieve specific textures.

Technical Terminology for Buyers

To ensure we match the right product to your needs, we use these industry-standard performance metrics

  • Rehydration (Cook Time): The time required to reach the "butterfly" state (where the kernel splits).
  • Texture Control: Highly dependent on simmer time. Short times yield a firm, nutty bite; longer times produce a softer, high-volume grain.
  • Scarification Impact: Higher scarification significantly reduces rehydration time and lightens the finished color, making it ideal for quick-service or pre-cooked applications.
  • Broken / Short Grain: A cost-effective SKU with similar coloring but smaller kernel sizes. It typically cooks in 20–30 minutes, making it an efficient option for soups or stuffings.

Wild rice is protected from genetic engineering under Minnesota state law. The Minnesota Department of Agriculture holds permit authority over any GMO wild rice release (MN Chapter 18), making every grain we mill non-GMO by law and by nature.
