GOURMET WILD RICE & CHEESE CASSEROLE
6 to 8 Servings
| ½ lb (approx 3 cups) |
mushrooms sliced

| 1 cup |
old cheddar cheese, grated
|
| 1 - 19 oz. |
Can whole tomatoes
|
|
½ cup
|
onions, diced |
| ½ cup |
butter
|
| 4 cups |
cooked Wild Rice
|
| 1 tsp |
salt
|
| 1 cup |
hot water
|
Saute mushrooms and onions in butter for about 5 minutes. Toss together with the Wild Rice and balance of ingredients. Place in buttered 2 quart casserole and bake for 1 hour
at 350°F.
This may be prepared the day before and baked just before serving. Serve as
a side dish with pork, poultry or game.
