All Shoal Lake Wild Rice products have guaranteed cook times.
What does this mean?
Simply put, when we say it cooks in 20 minutes we mean it cooks in 20 minutes
at standard cooking temperatures. We are one of very few companies who can make
this type of guarantee on all of our products.
What determines the cooking time for wild rice?
Its all in the roasting of the wild rice grain. The roasting time determines
how much moisture is left in the grain, which in turn determines the cook time
for that batch. Since all of our wild rice is processed at our own plant, we can
keep a tight control on this process and thereby guarantee the cook time on all
of our rice products.
Why might cooking times vary?
Not all wild rice products have guaranteed cook times because the rice is processed
in many different places before packaging. At Shoal Lake Wild Rice, we roast and
package our product ourselves. We have exacting quality controls on our roating
process which gives us full control of the wild rice cooking time and consistency.

Note: The setting time will vary according to the texture you desire. The longer
the Wild Rice sets, the softer it becomes. During setting time check the degree
of opening of the kernels and softness. When kernels are the texture you desire,
drain off excess water. When the kernel is 'flowered', (opened) the flavor is
enhanced and the texture is chewy.
